Italian   -   Risi E Bisi   adapted from great rice recipes from the world

  • 2 Cups Rice -- uncooked
  • 1/4 Pound Prosciutto -- diced
  • 2 Tablespoons Parmesan Cheese -- grated
  • 1 1/2 Pounds Peas
  • 2 Medium Green Onion -- finely chopped
  • 2 Tablespoons Parsley -- finely chopped
  • 3 Pints Hot Stock
  • 2 Ounces Butter
  • 2 Tablespoons Olive Oil
  • Parmesan Cheese -- for garnish
Directions heat oil and half butter in pan. saute onions and parsley. add peas and ham. add stock and bring to boil. add rice and simmer for 25-30 minutes. when rice is done stir in remaining butter and parmesan cheese.
Serves 4
