Italian   -   Risotto Portofino   adapted from The Complete Around the World Cookbook

Ingredients
  • 1 Onion -- chopped
  • 2 Cloves Garlic -- minced
  • 3 Tablespoons Butter
  • 1 Cup Uncooked Rice
  • 2 Medium Tomatoes -- cut into eighths
  • 1 1/2 Cups Chicken Broth
  • 1 Pound Shrimp -- deveined & chopped
  • 1/4 Teaspoon Rosemary -- crushed
  • Salt And Pepper -- to taste
  • 1 Can Sliced Mushrooms
  • 1 Bay Leaf
Directions 1. Saute onions & garlic.
2. Add rice, saute 2 more minutes.
3. Add remaining ingredients except shrimp.
4. Heat to boiling, stir once.
5. Reduce heat and simmer 20 minutes.
6. Add shrimp and cook 2 minutes or until shrimp is pink.
7. If rice seems too moist, let stand covered 10 minutes.
Serves 6
