Italian   -   Riviera Loaf   adapted from Betty Crockers New International Cookbook

  • 1 Loaf Italian Bread -- or french bread
  • 2 Tablespoons Black Olives -- chopped
  • 2 Tablespoons Pimiento Stuffed Olives -- chopped
  • 2 Tablespoons Sun-Dried Tomatoes, Oil-Packed -- chopped and drained
  • 1 Tablespoon Reserved Tomato Oil
  • 1 Tablespoon Fresh Parsley -- chopped
  • 2 Cloves Garlic -- finely chopped
  • 1 Cup Mozzarella Cheese -- shredded
Directions heat oven to 400 degrees. split loaf. place cut sides up on ungreased cookie sheet. mix all but cheese and spread over bread. sprinkle with cheese. bake 8-10 minutes or until cheese is melted.
