Italian   -   Roast Potatoes With Onion & Rosemary   adapted from A Fresh Taste of Italy by Michele Scicolone

  • 2 Pounds Yukon Gold Potatoes -- cubed
  • 1/4 Cup Olive Oil
  • 1 Small Onion -- finely chopped
  • 2 Tablespoons Fresh Rosemary -- finely chopped
  • Salt And Pepper -- to taste
Directions Preheat oven to 400*.
In baking pan large enoguht ot hold themn in a sinlge layer, place potatoes and sprinlke wit remaiign ingredients. Roast the potatoes, stirring every 15 minutes.
