Italian   -   Roasted Cod With Potatoes And Mushrooms   adapted from A Fresh Taste of Italy by Michele Scicolone

  • 4 Tablespoons Olive Oil
  • 1 Teaspoon Marjoram
  • 2 Tablespoons Lemon Juice
  • 1 Clove Garlic -- finely chopped
  • Salt And Pepper -- to taste
  • 1 Pound Thick Cod Fillets -- or halibut or turbot
  • 1/4 Pound Shiitake Mushrooms
  • 4 Small Baking Potatoes -- thinly sliced
Directions Preheat oven to 450 degrees. Lightly grease a 15x10x1 inch pan. Combine 1 tablespoon of oil, half the marjoram, lemon juice, garlic, salt and pepper. Pour this mixture over the fish and let marinate for 20 minutes. Slice the mushrooms and combine with potatoes, remaining oil, marjoram, salt and pepper. Spread evenly into the pan. Bake for 20 minutes. Turn vegetables over and bake for 20 minutes more. Place fish on top of potatoes and bake for 10 minutes. Serve.
