Italian   -   Roasted Garlic Pesto   adapted from Almost Vegetarian

  • 6 Cloves Garlic -- unpeeled
  • 1/4 Cup Fresh Basil -- minced
  • 1/4 Cup Parmesan Cheese -- grated
  • 1/2 Cup Nonfat Ricotta Cheese
  • 1 Pound Pasta Of Your Choice
Directions To roast garlic:
Wrap garlic cloves in foil. Place on bakign sheet. Bake at 425* for 25 minutes. Unwrap and cool to room temperature.
Squeeze pulp our of garlic cloves into food processor. Add remaingin ingredients except pasta. Process into paste. Toss with cooked pasta and serve.
