Italian   -   Roasted Tomato Sauce   adapted from Vivid Flavors

  • 1 Pound Tomatoes -- cored
  • 1 Medium Leek -- roughly chopped
  • 1 Small Red Bell Pepper -- chopped
  • 2 Tablespoons Olive Oil
  • 1/2 Teaspoon Salt
  • 1 Pound Pasta -- of your choice
Directions coat tomatoes, leek, and pepper in olive oil. Place on baking sheet. roast in preheated 350 degree oven for 50 minutes. The tomatoes and leek should be brown. When done, puree in food processor until smooth with just a few chunks. add salt and serve over any type of pasta.
