Italian   -   Sage Soup   adapted from Mediterranean Cooking

Ingredients
  • 2 Bunches Fresh Sage
  • 1/2 Cup Olive Oil
  • 3 Cloves Garlic -- finely chopped
  • 1 Cup Peas
  • 1 Cup Lima Beans
  • 1 Medium Carrot -- diced
  • 1 Stalk Celery -- diced
  • 1 Can Artichoke Hearts -- chopped
  • 2 Quarts Water
  • Salt And Pepper -- to taste
  • 1 Large Ancho Chile -- crumbled
  • Garlic Bread
  • Parmesan Cheese -- grated
Directions Add sage leaves to dutch oven. Pour over the olive oil. Cook over a very low heat, 5 minutes. Add all vegetables, stir briskly 5 minutes. Add remaining ingredients except garnishes. Bring to boil, simmer till tender, about 30 minutes. Serve with bread and sprinkle with cheese.
