Italian   -   Seafood Couscous   adapted from A Fresh Taste of Italy by Michele Scicolone

Ingredients
  • 1 Package Couscous -- cooked
  • 1 Large Onion -- finely chopped
  • 1/4 Cup Olive Oil
  • 2 Cloves Garlic -- finely chopped
  • 1 Medium Bay Leaf
  • 2 Large Tomatoes -- finely chopped
  • 4 Tablespoons Parsley -- finely chopped
  • 1 Pinch Cinnamon
  • 1 Pinch Cloves
  • 1 Pinch Nutmeg
  • 1 Pinch Saffron
  • 1 Pinch Cayenne
  • Salt And Pepper -- to taste
  • 1 Pound Fish Or Shellfish -- any kind
Directions Cook onion in oil for 5 minutes. Add garlic and bay leaf and cook for 1 minute. Add tomatoes, 2 tablespoons of parsley, cinnamon, cloves, nutmeg, saffron and cayenne. Cook for 5 minutes. Add 2 cups water, salt and pepper. Bring to a simmer. If using fish, cut into cubes and add to the pot or just add the shellfish. Cover and cook for 5 minutes. Add couscous and mix well. Serve.
