Italian   -   Shrimp And White Bean Stew   adapted from Food And Wine

  • 2 Tablespoons Olive Oil
  • 1 Medium Onion -- chopped
  • 3 Cloves Garlic -- finely chopped
  • 3 Cups Cannellini Beans -- cooked
  • 1 Can Crushed Tomatoes
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Rosemary
  • 1/2 Teaspoon Pepper
  • 4 Cups Fish Stock -- or chicken
  • 1 Pound Medium Shrimp -- shelled and deveined
  • 1/4 Cup Parsley -- finely chopped
Directions Saute onion and garlic in olive oil unti softened. Stir in beans, tomatoes, salt, rosemary and pepper. Add stock and bring to boil. Reduce heat and simmer for 15 minutes. Add shrimp and simmer 2 minutes. Remove from heat and stir in parsley. Serve.
