Italian   -   Spaghetti With Double Tomato Relish And Fresh Mozzarella   adapted from Vegetarian Pasta by Marlena Spieler

  • 1 Pound Spaghetti
  • 8 Large Tomatoes -- finely chopped
  • 15 Large Sun-Dried Tomatoes -- finely chopped
  • 1/2 Cup Fresh Basil -- finely chopped
  • 3 Cloves Garlic -- finely chopped
  • 2 Tablespoons Olive Oil
  • Salt And Pepper -- to taste
  • 12 Ounces Mozzarella Cheese -- diced
Directions Cook spaghetti as directed. Meanwhile, mix fresh and sun dried tomatoes with basil, garlic, and olive oil. Taste for seasoning. Add salt, pepper and more garlic if needed. Drain spaghetti and toss with sauce and cheese.
