Italian   -   Spaghetti With Lusty Tomato Sauce   adapted from Vegetarian Pasta by Marlena Spieler

  • 1 Small Onion -- finely chopped
  • 3 Cloves Garlic -- finely chopped
  • 2 Tablespoons Olive Oil
  • 2 Cans Diced Tomatoes
  • 2 Tablespoons Tomato Paste
  • 1 Pinch Sugar
  • 12 Ounces Peas
  • 1/2 Teaspoon Thyme
  • 1/4 Teaspoon Fennel
  • Salt And Pepper -- to taste
  • 12 Ounces Spaghetti
  • 2 Tablespoons Fresh Basil -- finely chopped
  • Parmesan Cheese -- to taste
Directions Saute onion and garlic in olive oil until soft. Add tomatoes, tomato paste, sugar, peas, thyme and fennel. Bring to a boil and cook for 10 minutes. Season with salt and pepper. Cook pasta as directed, toss with sauce and serve sprinkled with basil and cheese.
