Italian   -   Spaghetti With Shrimp & Fresh Fennel   adapted from classic pasta

Ingredients
  • 1 Pound Spaghetti
  • 2 Tablespoons Olive Oil
  • 2 Cloves Garlic
  • 3 Cups Fresh Fennel -- chopped
  • 1 Pound Plum Tomatoes -- chopped
  • 1/2 Teaspoon Dried Marjoram
  • 1/2 Pound Shrimp -- peeled & Chopped
  • Salt And Pepper -- to taste
Directions 1. Saute garlic & fennel in oil.
2. Add 1/4 cup water, cover & simmer 20 minutes.
3. Drain water if it has not fully evaporated.
4. Add tomatoes, cook 5 minutes.
5. Add remaining ingredients, cook until shrimp turn pink.
6. Cook pasta as usual, top and serve.
Serves 4
