Italian   -   Spaghetti With Spinach Sauce   adapted from The Complete Around the World Cookbook

  • 1 Pound Spaghetti
  • 1 Cup Fresh Spinach -- firmly packed
  • 1/4 Cup Fresh Parsley -- firmly packed
  • 1 Clove Garlic
  • 1/4 Cup Butter
  • 1/4 Cup Olive Oil
  • 1/4 Cup Pine Nuts
  • 1/4 Cup Romano Cheese -- freshly grated
  • 1/4 Cup Parmesan Cheese -- freshly grated
  • 1/8 Teaspoon Salt
  • 1/2 Teaspoon Basil
Directions 1. Cook spaghetti according to package directions and drain.
2. Wash spinach and parsley, shake to remove excess water, but allow some water to cling to leaves.
3. Blend all ingredients except noodles in blender on high until it makes a thick puree, with some flecks of spinach & parsley still visible. If it looks to thick, add a small amount of water.
4. Toss in large bowl with spaghetti until thoroughly coated. Serve immediately.
