Italian   -   Split Pea Soup Milano   adapted from unknown

  • 1 Cup Split Peas -- yellow or green
  • 5 Cups Water
  • 5 Bouillon Cubes
  • 1/2 Pound Italian Sausage
  • 1 Cup Celery -- chopped
  • 1 Medium Onion -- chopped
  • 3 Cloves Garlic -- finely chopped
  • 1 Small Red Bell Pepper -- chopped
  • 1/4 Cup Dry Red Wine
  • Salt And Pepper -- to taste
  • Grated Parmesan Cheese -- for garnish
Directions combine cubes, peas, water and salt and pepper. Bring to boil and simmer for 30 minutes. stirring occasionally. brown sausage, celery, onion, pepper and garlic. add to soup. add wine. simmer for 15 minutes to blend flavors and top with parmesan cheese.
Serves 6
