Italian   -   Sugo Di Castrato (Mutton Sauce)   adapted from Culinaria Italy

  • 1 Medium Onion -- Chopped
  • 1 Teaspoon Rosemary
  • 2 Slices Bacon -- Chopped
  • 1/2 Pound Mutton -- Chopped
  • 1 Cup Dry White Wine
  • Salt And Pepper -- To Taste
  • 1 Can Tomatoes -- Chopped
  • 16 Ounces Fusilli Pasta
Directions Saute onion, bacon, mutton and rosemary until bacon and mutton are browned. Season with salt and pepper. Add wine and simmer for 15 minutes. Add tomatoes and simmer for 1 hour. Cook pasta as directed and top with sauce.
Serves 4
