Italian   -   Tomato-Lentil Soup   adapted from contadina

Description  
Ingredients
  • 2 Tablespoons Olive Oil
  • 2 Large Onion -- chopped
  • 3 Stalks Celery -- chopped
  • 1 Medium Carrot -- chopped
  • 6 Cups Water
  • 1 Cup Dry Lentils
  • 6 Ounces Tomato Paste
  • 1/2 Cup Chicken Broth
  • 1 Tablespoon Parsley -- dried
  • 3 Chicken Bouillon Cube
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Worcestershire Sauce
  • 1/2 Teaspoon Black Pepper
  • Parmesan Cheese -- to taste
Directions In saucepan, saute onion, celery, and carrot in oil until done. stir in remaining ingredients except cheese. boil, reduce heat, simmer uncovered for 50 minutes. sprinkle with cheese.
Serves 4
