Ingredients
  • 2 Cloves Garlic -- chopped
  • 2 Stalks Celery -- chopped
  • 1 Small Onion -- chopped
  • 1 Small Carrot -- chopped
  • 3 Tablespoons Butter
  • 8 Cups Chicken Broth
  • 4 Cups Water
  • 20 Ounces Tortellini, Cheese Filled
  • 2 Tablespoons Parsley -- chopped
  • 1/2 Teaspoon Pepper
  • 1 Teaspoon Nutmeg
  • Parmesan Cheese -- grated
Directions cover and cook garlin, celery, onion and carrot in butter in 6 quart Dutch oven over medium low heat 10 minutes. Stir in chicken broth and water. heat to boiling; reduce heat. Stir in Tortellini; cover and simmer 20 minutes stirring occasionally, or until tortellini are tender.
Stir in parsley, pepper and nutmeg. Cover and cook 10 minutes. Top with cheese.
Serves 8
