Jamaican   -   Jamaican Chicken Run Down   adapted from iron pots and wooden spoons

  • 6 Chicken Breast -- cut in 1-inch pieces
  • 1 Cup Coconut Milk
  • 2 Sprigs Fresh Thyme -- minced
  • 1 Medium Onion -- chopped
  • 1/2 Teaspoon Allspice
  • Salt And Pepper -- to taste
Directions place all ingredients in large heavy skillet. simmer over low heat stirring occasional for 45 minutes or until chicken is tender. serve over rice.
