Jamaican   -   Jamaican Jerk Pork   adapted from West Indies Cookbook

  • 1/3 Cup Olive Oil
  • 1/3 Cup Vinegar
  • 1 Medium Habenero
  • 4 Large Scallions -- chopped
  • 1 Tablespoon Allspice
  • 1/2 Teaspoon Nutmeg
  • 3 Medium Bay Leaves
  • Salt And Pepper -- to taste
  • 2 Cloves Garlic
  • 1 Teaspoon Cinnamon
  • 3 Pounds Pork
Directions Combine all in bowl but pork. Mix well and pour over pork. Marinate in refrigerator over night. Grill over charcoal or indoors under broiler until done.
Serves 6
