Jamaican   -   Jerk Pork (Jamaica)   adapted from A Taste of Africa

  • 3 Pounds Pork
  • 4 Large Serrano Pepper -- chopped
  • 2 Large Onion -- chopped
  • 1 Inch Ginger Root -- chopped
  • 4 Tablespoons Chilli Paste
  • 2 Tablespoons Olive Oil
  • 1 Teaspoon Allspice
  • 4 Tablespoons Soy Sauce
  • 3 Cloves Garlic -- chopped
Directions In food processor, blend everything but pork to a paste. Coat pork in marinade and allow to marinate overnight. Remove pork from marinade and roast in oven at 350 for 30 minutes or until well cooked. Pour marinade into sauce pan and simmer for 10 minutes. Serve marinade as a side for the pork.
