Jamaican   -   Universal Beans And Rice (Jamaica)   adapted from West Indies Cookbook

  • 2 Cups Dried Kidney Beans -- drained
  • 3 Cups Broth
  • 1/4 Cup Olive Oil
  • 6 Large Scallions -- chopped
  • 3 Cloves Garlic -- crushed
  • 1 Medium Habenero -- chopped
  • 2 Teaspoons Oregano
  • 2 Packets Goya Sazon Seasoning
  • 1 Cup Rice -- uncooked
  • 1/2 Cup Cream Of Coconut
Directions Soak beans overnight. Drain, Add broth and cook, boil reduce heat and simmer 2-3 hours until tender. In skillet, saute scallions & garlic in olive oil until soft. Add sauteed mixture to beans along with remaining ingredients. Simmer, 40 minutes, adding water if necessary.
Serves 6
