Jamaican - Universal Beans And Rice (Jamaica)

Ingredients
|
- 2 Cups Dried Kidney Beans -- drained
- 3 Cups Broth
- 1/4 Cup Olive Oil
- 6 Large Scallions -- chopped
- 3 Cloves Garlic -- crushed
- 1 Medium Habenero -- chopped
- 2 Teaspoons Oregano
- 2 Packets Goya Sazon Seasoning
- 1 Cup Rice -- uncooked
- 1/2 Cup Cream Of Coconut

Directions

Soak beans overnight. Drain, Add broth and cook, boil reduce heat and simmer 2-3 hours until tender. In skillet, saute scallions & garlic in olive oil until soft. Add sauteed mixture to beans along with remaining ingredients. Simmer, 40 minutes, adding water if necessary.
