Japanese   -   Asparagus With Mustard Dressing   adapted from Japanese Cooking A Simple Art by Shizuo Tsuji

  • 20 Spears Asparagus -- trimmed
  • 1/2 Teaspoon Salt
  • 2 Teaspoons Dry Mustard -- mixed with
  • 2 Teaspoons Water
  • 1 Medium Egg
  • 1 Teaspoon Dark Soy Sauce
Directions Cut spears into bite sized pieces. Add salt to wanter, enoug to cover, bring to boil, add asparagus simmer until tender. Add egg and soy sauce sto mustard mixture. Stir thoroughly, top aspargus with this sauce.
