Japanese   -   Foil Cooked Enokitake Mushrooms   adapted from Japanese Cooking A Simple Art by Shizuo Tsuji

  • 2 Bunches Enoki Mushrooms
  • 1 Tablespoon Butter
  • 1 Small Lemon -- thinly sliced
  • 5 Sprigs Parsley -- or cilantro
Directions Cut off spongy enoki mushroom root. Use the butter to boil a large square of foil. Place mushrooms in center. Top with anothe pat of botter, lemon, sprinkle on greens. Fold up carefully. Bake at 475* for 5 minutes.
