Japanese   -   Japanese Chicken Burgers   adapted from Japanese Cooking A Simple Art by Shizuo Tsuji

  • 1/2 Pound Ground Chicken
  • 1 Large Green Onion -- finely chopped
  • 2 Large Shiitake Mushrooms -- finely chopped
  • 1 Teaspoon Fresh Ginger Root -- grated
  • 1 Tablespoon Sake
  • 1 Teaspoon Dark Soy Sauce
  • 1 Medium Lemon -- quartered
  • Flour -- for dusting
Directions Combine all ingredients except lemon & flour. Form into 4 evenly sized rectangular patties, about 1/4 thick on baking sheet. Dust lightly with flour. Bake in oven at 350* for about 20 minutes until done, turn once.
Serves 4
