Japanese   -   Noodles With Scallions (Japan)   adapted from Kitchen Witch's Cookbook

  • 1 Pound Soba Noodles
  • 1/4 Teaspoon Salt
  • 1 Tablespoon Seaweed
  • 1/2 Inch Ginger Root
  • 1/3 Cup Sake
  • 1/4 Cup Soy Sauce
  • 1 Tablespoon Sugar
  • 8 Medium Scallions With Tops -- minced
Directions Boil noodles as directed. Place seaweed and ginger root in teaball or cheese cloth bag. Put teaball in 4 cups of water in saucepan and warm over low heat for 15 minutes. Stir in sake, sugar and soy sauce. Remove teaball. Heat until sugar is dissolved. arrange noodles on plates, garnish with scallions, and use sauce for dipping. Serve hot or cold.
