Japanese   -   Parent And Child   adapted from Japanese Cooking A Simple Art by Shizuo Tsuji

  • 4 Fillets Salmon
  • Oil -- for frying
  • 2 Tablespoons Sake
  • 1 Cup Daikon -- grated
  • 1 Small Egg -- beaten
  • 1 Pinch Salt
  • ~~Sauce~~
  • 1 Cup Dashi
  • 2 Tablespoons Light Soy Sauce
  • 3 Tablespoons Mirin
  • 2 Tablespoons Vinegar
  • 2 Teaspoons Cornstarch -- mixed with
  • 2 Teaspoons Water
  • 1 Medium Lemon -- quartered
Directions Salt salmon, place in lighly oiled frying pan, fry 3 minutes total, turning once. Mix daikon, sake, egg and salt. Spoon this over salmon pieces that have been laid in bamboo steamer. Steam this 5 minutes. In medium saucepan, combine sauce ingredients except lemon, bring to boil, allow to thicken remove from heat. Place salomon and daikon on plate, spoon sauce over, squeeze lemon over.
