Japanese - Soba With Four Mushroom Sauce

Ingredients
|
- 1/4 Pound Oyster Mushrooms -- Sliced
- 1/4 Pound Shiitake Mushrooms -- Sliced
- 1/4 Pound Chanterelle Mushrooms -- Sliced
- 1/4 Pound Button Mushrooms -- Sliced
- 3 Tablespoons Butter
- 2 Tablespoons Dark Soy Sauce
- 2 Tablespoons Sake
- 1/2 Cup Dashi -- Or Chicken Both
- 2 Pounds Mushroom Soba -- Or Regular
- 1 Package Enoki Mushrooms -- Diced For Garnish
- 2 Tablespoons Parsley -- Finely Chopped

Directions

Melt butter in skillet, add the top four mushrooms and saute for 5 minutes. Add soy sauce, sake and dashi. Cover and cook for 15 minutes. Cook Soba as directed. Pour sauce over noodles and toss with enoki mushrooms and parsley.
