Japanese   -   Soba With Four Mushroom Sauce   adapted from Colette's Japanese Cuisine

Ingredients
  • 1/4 Pound Oyster Mushrooms -- Sliced
  • 1/4 Pound Shiitake Mushrooms -- Sliced
  • 1/4 Pound Chanterelle Mushrooms -- Sliced
  • 1/4 Pound Button Mushrooms -- Sliced
  • 3 Tablespoons Butter
  • 2 Tablespoons Dark Soy Sauce
  • 2 Tablespoons Sake
  • 1/2 Cup Dashi -- Or Chicken Both
  • 2 Pounds Mushroom Soba -- Or Regular
  • 1 Package Enoki Mushrooms -- Diced For Garnish
  • 2 Tablespoons Parsley -- Finely Chopped
Directions Melt butter in skillet, add the top four mushrooms and saute for 5 minutes. Add soy sauce, sake and dashi. Cover and cook for 15 minutes. Cook Soba as directed. Pour sauce over noodles and toss with enoki mushrooms and parsley.
