Japanese   -   Spinach With Sesame Dressing   adapted from Japanese Cooking A Simple Art by Shizuo Tsuji

  • 1 Pound Spinach -- parboiled and choppe
  • 4 Tablespoons White Sesame Seeds
  • 1 Teaspoon Sugar
  • 2 Teaspoons Dark Soy Sauce
  • 3 Tablespoons Dashi
Directions Toast sesame seeds then put hot seeds into a mortar and crush. Add sugar. Add soy sauce and dashi. Mix with an almost whipping action. Put spinach in the dressing. With a very light touch mix carefully.
