Japanese   -   Udon With Miso Pesto (Japan)   adapted from vegetariana

Ingredients
  • ** Pesto Sauce -- **
  • 1/4 Pound Spinach -- trimmed
  • 1/3 Cup Fresh Basil -- chopped
  • 1/4 Cup Pine Nuts
  • 1/4 Cup Olive Oil
  • 2 Tablespoons Miso -- to taste
  • 2 Tablespoons Fresh Parsley
  • 1/2 Pound Udon Noodles
  • 1 Tablespoon Olive Oil
  • 2 Cloves Garlic -- crushed
  • 1 Large Hot Chili Peppers -- seeded and chopped
  • 14 Ounces Plum Tomatoes -- with liquid chopped
  • 1/2 Cup Black Olives -- sliced
  • Pepper -- to taste
Directions combine sauce ingredients in food processor and create course puree. cook noodles al dente, drain and toss with pesto and cover. Saute garlic and pepper in olive oil. add tomatoes, olives and black pepper. Simmer 5 minutes. Stir into noodle mixture and serve at once or at room temperature.
