Korean   -   Crab Cakes Song Jook Hun Style (Keh Sulchun)   adapted from The Korean Kitchen by Copeland Marks

  • 1/2 Cup Cooked Rice
  • 1/2 Cup Crabmeat -- flaked
  • 1 Small Onion -- finely chopped
  • 1 Clove Garlic -- finely chopped
  • 1 Small Carrot -- grated
  • 1/2 Teaspoon Pepper
  • Oil -- for frying
Directions Mash the rice well and mix it with the crabmeat, onion, garlic, carrot and pepper. Prepare 4 patties about 3 inches in diameter and 1/2 inch thick. Heat oil in a skillet and brown the patties over moderate heat for 3 minutes on each side. Drain on paper towels. Serve warm.
