Korean   -   Crab Stew (Gye Tang)   adapted from The Korean Kitchen by Copeland Marks

  • 1 Pound Crab -- flaked
  • 1 Tablespoon Garlic -- finely chopped
  • 1 Tablespoon Miso
  • 2 Tablespoons Soy Sauce
  • 2 Teaspoons Hot Chili Powder
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 2 Cups Water
  • 1 Medium Onion -- finely chopped
  • 4 Large Jalapeno -- finely chopped
  • 1 Large Zucchini -- cubed
  • 3 Large Scallion -- finely chopped
Directions Mix together garlic, miso, soy sauce, chili powder, salt and pepper. Put the water into a pan, add the seasonings and onion. Bring to a boil and cook over low heat for 10 minutes. Add the crab, chiles, zucchini and scallions, cover the pan and cook over moderate heat for 10 minutes. Uncover and remove pan from the heat. Let stand for 10 minutes move covered. Serve warm with rice.
