Korean   -   Dried Shrimp Consomme (Marun Saeoo)   adapted from The Korean Kitchen by Copeland Marks

  • 6 Cups Water
  • 2 Tablespoons Dried Shrimp
  • 1 Small Carrot -- diced
  • 1 Small Onion -- finely chopped
  • 1 Small Korean Radish -- diced
  • 1 Tablespoon Sesame Seeds -- toasted
  • 1 Teaspoon Hot Chili Powder
  • 1 Teaspoon Ginger -- grated
  • 1 Teaspoon Salt
  • Watercress -- for garnish
Directions Bring the water to a boil in a large pan. Add the shrimp, carrot, onion, radish, sesame seeds, chili powder, ginger and salt. Cook rapidly for 5 minutes then reduce the heat to low and simmer for 20 minutes. Strain the broth and discard all vegetables and seasonings. Serve hot in bowls garnished with watercress.
