Korean   -   Miniature Meat Pancakes (Tongurangteng)   adapted from The Korean Kitchen by Copeland Marks

  • 1 Cup Flour
  • 1 Medium Egg -- beaten
  • 1 Cup Water
  • Salt And Pepper -- to taste
  • 2 Medium Scallion -- finely chopped
  • 3 Ounces Pork -- chopped
  • 1 Small Carrot -- grated
  • 2 Tablespoons Olive Oil -- for frying
Directions Mix everything together except oil using just enough water to make a thick batter. Heat oil in skillet and drop in 1 heaping tablepoon of batter. Press batter down into the shape of a pancake. Lightly brown over moderate heat for 3 minutes on each side. Serve with the sauce of your choice.
