Lebanese   -   Djaaj Bbassal (Chicken With Onions)   adapted from Lebanese Cooking by Dawn, Elaine and Selwa Anthony

  • 4 Tablespoons Olive Oil
  • 1 Large Chicken -- In 8 Pieces
  • 3 Large Onion -- Sliced
  • 1 Tablespoon Flour
  • 6 Cups Chicken Stock
  • 2 Teaspoons Salt
  • 1/2 Teaspoon Pepper
  • 1 Teaspoon Cumin
  • 4 Lemons Lemon Juice
Directions Saute onions and chicken in oil until well browned. Sprinkle with flour and allow the flour to darken. Add stock and stir well. Add salt, pepper and cumin and simmer for 1 hour. Remove from heat, add lemon juice and serve with rice.
Serves 4
