Lebanese   -   Lebanese Eggs With Squash And Tomato   adapted from The Universal Kitchen by Elisabeth Rozin

Ingredients
  • 1 Medium Zucchini -- Diced
  • 1 Medium Yellow Squash -- Diced
  • 1 Can Tomatoes -- Chopped
  • 3 Tablespoons Olive Oil
  • 1 Bunch Scallion -- Chopped
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 1 Teaspoon Cinnamon
  • 6 Large Eggs -- Beaten
  • 3 Tablespoons Cheddar Cheese -- Grated
Directions Saute zucchini, squash and tomatoes in oil for 10 minutes. Add scallions, salt, pepper and cinnamon. Saute for 3 minutes. Add eggs, cover the pan and cook for 10 minutes. Sprinkle with cheese, cut into wedges and serve.
Serves 4
