Lebanese - Lebanese Eggs With Squash And Tomato

Ingredients

- 1 Medium Zucchini -- Diced
- 1 Medium Yellow Squash -- Diced
- 1 Can Tomatoes -- Chopped
- 3 Tablespoons Olive Oil
- 1 Bunch Scallion -- Chopped
- 1 Teaspoon Salt
- 1 Teaspoon Pepper
- 1 Teaspoon Cinnamon
- 6 Large Eggs -- Beaten
- 3 Tablespoons Cheddar Cheese -- Grated

Directions
|
Saute zucchini, squash and tomatoes in oil for 10 minutes. Add scallions, salt, pepper and cinnamon. Saute for 3 minutes. Add eggs, cover the pan and cook for 10 minutes. Sprinkle with cheese, cut into wedges and serve.
