Lebanese   -   Lentil & Bean Soup (Lebanon)   adapted from unknown

  • 1/4 Cup Chickpeas
  • 1/4 Cup Lima Beans
  • 1/4 Cup Kidney Beans
  • 1/4 Cup Lentils -- washed & drained
  • 10 Cups Water
  • 1 Large Onion -- chopped
  • 1/2 Cup Vegetable Oil
  • 1/4 Cup Rice
  • 1/2 Teaspoon Cumin
  • Salt And Pepper -- to taste
Directions Place peas, beans & lentils in pan with water, bring to boil, reduce heat cook 45 minutes. Meanwhile, saute onion in oil, add to bean mixture, add other ingredients, cook for another 30 minutes.
This is for dried beans, faster for fresher.
Serves 4
