Lebanese   -   Potato Lentil Soup   adapted from Taste of Lebanon

  • 1 Pound Ground Beef
  • 1 Medium Onion -- coarsely chopped
  • 3 Tablespoons Olive Oil
  • 1 Cup Lentils -- washed & drained
  • 10 Cups Water
  • 3 Medium Potatoes -- diced
  • Salt And Pepper -- to taste
Directions brown meat and onions, until meat is browned. add lentils and water. cover and cook until lentils are tender about 45 minutes. add potatoes, salt and pepper. cook until potatoes are tender. serve with pita bread.
