Lebanese   -   Rice For Fish   adapted from Taste of Lebanon

Ingredients
  • 1/2 Cup Peanut Oil
  • 1/4 Cup Pine Nuts
  • 1 Large Onion -- sliced
  • 2 Cups Rice -- washed & drained
  • Salt And Pepper -- to taste
  • 3 1/2 Cups Boiling Water
Directions heat oil in saucepan. brown pine nuts lightly. Remove from oil and set aside. Brown onions in same oil. add rice, salt and pepper. Stir well. add water. return to boil. cover and simmer until rice is tender, about 30 minutes. to serve turn out on platter and sprinkle with pine nuts and serve with fish.
