Lebanese   -   Spinach Soup   adapted from Taste of Lebanon

  • 1 Pound Stew Meat -- beef or lamb
  • 1/4 Cup Butter
  • 1 Large Onion -- chopped
  • 3 Cloves Garlic -- finely chopped
  • 10 Cups Water
  • 1/2 Cup Rice -- washed & drained
  • Salt And Pepper -- to taste
  • 1/8 Teaspoon Cinnamon
  • 2 Pounds Spinach -- finely chopped
  • 1/4 Cup Parsley
Directions brown meat in butter, saute until meat is brown. Add onions and garlic. cook until onion is transparent. add water and bring to boil. cover and cook over medium heat until meat is tender. add rice and cook 20 minutes. add seasonings and spinach. return to boil and simmer for 10 minutes. add parsley. stir and serve.
