Ingredients
  • 6 Bunches Parsley -- finely chopped
  • 2/3 Cup Bulgur
  • 1 Quart Water
  • 8 Medium Scallions -- chopped
  • 1/2 Cup Fresh Mlin -- chopped or
  • 1/4 Cup Dry Mint
  • 4 Large Tomatoes -- finely chopped
  • 2 Teaspoons Salt
  • 1 Teaspoon Pepper
  • 2/3 Cup Lemon Juice
  • 1/2 Cup Olive Oil
Directions Soak bulgur in water for 2 mlinutes. Drain well. Add parsley to bulgur mix, add remaining ingredients. If not serving right away, do not add tomatoes & onions until just before serving.
Serves 8
