Lebanese - Tomato Soup With Semi Di Melone

Ingredients

- 2 Tablespoons Butter
- 1 Tablespoon Olive Oil
- 1 Medium Onion -- chopped
- 1 Clove Garlic -- chopped
- Salt And Pepper -- to taste
- 4 Medium Tomatoes -- chopped
- 2 Cups Hot Water
- 3 Cups Hot Beef Broth
- 2 Cups Escarole -- shredded
- 1 Cup Semi Di Melone
- 1 Lemon Lemon Juice
- 1 Tablespoon Fresh Mint -- chopped

Directions
|
saute onion and garlic in butter and oil. Season with salt and pepper and saute until soft. stir in tomatoes and simmer for 5 minutes. add water, broth and escarole. Simmer for 20 minutes. Stir in pasta and cook for 5 minutes or until al dente add lemon juice and mint leaves. simmer for 1 minutes and serve.
