Lebanese   -   Tomato Soup With Semi Di Melone   adapted from The world of Pasta

  • 2 Tablespoons Butter
  • 1 Tablespoon Olive Oil
  • 1 Medium Onion -- chopped
  • 1 Clove Garlic -- chopped
  • Salt And Pepper -- to taste
  • 4 Medium Tomatoes -- chopped
  • 2 Cups Hot Water
  • 3 Cups Hot Beef Broth
  • 2 Cups Escarole -- shredded
  • 1 Cup Semi Di Melone
  • 1 Lemon Lemon Juice
  • 1 Tablespoon Fresh Mint -- chopped
Directions saute onion and garlic in butter and oil. Season with salt and pepper and saute until soft. stir in tomatoes and simmer for 5 minutes. add water, broth and escarole. Simmer for 20 minutes. Stir in pasta and cook for 5 minutes or until al dente add lemon juice and mint leaves. simmer for 1 minutes and serve.
