Lebanese   -   Yakhnit Loobyeh (Green Bean Stew)   adapted from Lebanese Cooking by Dawn, Elaine and Selwa Anthony

  • 1 Pound French-Style Green Beans
  • 1 Pound Beef -- Cubed
  • 2 Large Onion -- Chopped
  • 3 Tablespoons Olive Oil
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 1/2 Teaspoon Cumin
  • 1 Can Tomato Paste -- Mixed With
  • 2 Cups Beef Broth
  • 2 Cloves Garlic -- Chopped
  • 1 Teaspoon Coriander
Directions Saute beef and onions in oil until browned. Add beans, salt, pepper, cumin, and tomato paste mixture. Bring to a boil. Simmer for 1 hour. Add garlic and coriander and simmer for 5 minutes. This is dry soup. Serve over rice.
