Malaysian   -   Malaysian Fried Noodles   adapted from vegetariana

  • 8 Large Shiitake Mushrooms -- sliced into strips
  • 1/2 Pound Narrow Egg Noodles
  • 3 Tablespoons Peanut Oil
  • 3 Stalks Celery -- chopped
  • 3 Cloves Garlic -- crushed
  • 1 Package Frozen Green Beans -- thawed
  • 2 1/2 Tablespoons Soy Sauce -- to taste
  • 2 Dashes Hot Sauce
  • 1 Tablespoon Sherry -- optional
  • 1 Teaspoon Ginger -- grated
  • Scallions -- for garnish
Directions cook noodes as directed. heat peanut oil in wok, saute celery and garlic over moderatly high heat. when celery is tender add noodles, mushrooms, beans, sherry, soy sauce and ginger. stir fry 1 minute. lower heat, continue to cook until noodles brown lightly. garnish with minced scallions and serve.
