Malaysian   -   Pork With Ginger (Jani Masak Halia)   adapted from The Exotic Kitchens of Malaysia by Copeland Marks

  • 2 Pounds Pork -- cubed
  • 1 Medium Egg -- beaten
  • 2 Tablespoons Flour
  • Oil -- for frying
  • 1 Inch Ginger -- finely chopped
  • 2 Cloves Garlic -- finely chopped
  • 1 Medium Onion -- finely chopped
  • 1 Large Jalapeno -- finely chopped
  • 1 Tablespoon Oyster Sauce
  • 1/3 Cup Water
  • 1/4 Teaspoon Salt
  • 1/8 Teaspoon Pepper
  • 2 Large Scallion -- finely chopped
Directions Put pork in bowl add egg and mix well. Add flour and combine. Heat oil in skillet and fry for 1 minute. Remove, drain on paper towels and set aside. Remove all oil except 1 tablespoon. Add ginger, garlic and onion, fry for 1 minute. Add pork and toss. Add jalapeno, oyster sauce, water, salt and pepper. Bring to a simmer and simmer over low heat for 3 minutes. Stir in scallions. Serve with rice.
