Middle Eastern   -   Date Cookies (Iraq)   adapted from From the Lands of Figs and Olives by Salloum and Peters

  • 2 Cups Flour
  • 1 Teaspoon Baking Powder
  • 1/2 Teaspoon Cardamom
  • 1/2 Teaspoon Salt
  • 3/4 Cup Butter -- melted
  • 1 Cup Sugar
  • 3 Medium Eggs
  • 1 Cup Dates -- chopped
  • 1 Cup Walnuts -- chopped
Directions Sift together flour, baking powder, cardamom and salt. Set aside. Mix the butter, sugar and eggs well. Then add gradually to the dry mixture until a soft dough forms. Stir in dates and walnuts. Place in heaping teaspoons onto a cookies sheet about an inch apart. Place in 350 degree oven and bake for 15 minutes. Serve.
