Middle Eastern   -   Hummus (Jordan)   adapted from From the Lands of Figs and Olives by Salloum and Peters

  • 1 Can Chickpeas -- drained
  • 1/2 Cup Tahini
  • 6 Tablespoons Lemon Juice
  • Salt And Pepper -- to taste
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Mint -- finely chopped
Directions In blender, place chickpeas, tahini, lemon juice, salt and pepper. Blend until you get a smooth paste. Spread on a serving plate and sprinkle with olive oil and mint.
