Middle Eastern   -   Iranian Spinach And Yogurt Bread (Borani)   adapted from Ethnic Breads

  • 1/4 Cup Chopped Spinach -- squeezed dry
  • 2 1/4 Teaspoons Active Dry Yeast
  • 2 2/3 Cups Bread Flour
  • 3/4 Cup Whole Wheat Flour
  • 3 Tablespoons Wheat Germ
  • 1 1/4 Tablespoons Sugar
  • 1 1/2 Teaspoons Salt
  • 1/4 Cup Onion -- finely chopped
  • 1/3 Cup Plain Yogurt
  • 1 Medium Egg
  • 1 Medium Egg Yolk
  • 1/4 Cup Water
  • 3/4 Teaspoon Sesame Seeds
Directions In a piece of cheesecloth, squeeze as much moisture from the spinach as you can. Add all ingredients except for the sesame seeds in order suggested by your bread machine manual. Process on bread cycle. During the final rising sprinkle sesame seeds on top.
