Middle Eastern   -   Tahini And Cumin Dip (Syria)   adapted from Recipes for an Arabian Night by David Scott

  • 1 Cup Tahini
  • 2 Cloves Garlic -- finely chopped
  • 1 Lemon Lemon Juice
  • 1/2 Cup Water
  • 1/2 Teaspoon Cumin
  • 1/2 Teaspoon Cumin Seed
  • 1 Tablespoon Parsley -- finely chopped
Directions Put tahini in a bowl and whisk until smooth. Stir in garlic and lemon juice. Add water slowly, while whisking until dip is a consistency to your liking. Stir in ground cumin, sprinkle with cumin seed and parsley. Serve with pita bread for dipping.
