Mexican   -   Baked Potatoes With A Red Bean Salsa   adapted from unknown

Ingredients
  • 1 Small Green Pepper -- chopped
  • 1 Can Red Beans -- drained
  • 1 Medium Onion -- chopped
  • 1 Medium Tomato -- chopped
  • Salt And Pepper -- to taste
  • 2 Tablespoons Fresh Parsley
  • 1 Teaspoon Dried Basil
  • 1 Teaspoon Dried Oregano
  • 1 Teaspoon Garlic
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Red Wine Vinegar
  • 6 Medium Potatoes -- baked
  • 1 Cup Sour Cream
Directions Combine all ingredients except potatoes & soure cream. Cover & refrigerate 1 hour. Serve over baked potatoes & top with sour cream.
Serves 6
