- 1 Small Green Pepper -- chopped
- 1 Can Red Beans -- drained
- 1 Medium Onion -- chopped
- 1 Medium Tomato -- chopped
- Salt And Pepper -- to taste
- 2 Tablespoons Fresh Parsley
- 1 Teaspoon Dried Basil
- 1 Teaspoon Dried Oregano
- 1 Teaspoon Garlic
- 1 Tablespoon Olive Oil
- 1 Tablespoon Red Wine Vinegar
- 6 Medium Potatoes -- baked
- 1 Cup Sour Cream

Directions

Combine all ingredients except potatoes & soure cream. Cover & refrigerate 1 hour. Serve over baked potatoes & top with sour cream.
